Varanese is excited to be hosting a Constellation Fine Wine Dinner on Tuesday, June 20 with a reception at 6:30pm and dinner at 7:00pm.

The event will feature guest speaker Kathryn Carter from Constellation Brands, and six creative courses expertly paired with selections from the Robert Mondavi Winery and The Prisoner Wine Company, which includes a line of wines founded by Orin Swift.

The menu was created by the Varanese team led by Chef Erik Abraham and will consist of:

First Course
Robert Mondavi Fume Blanc
 Shrimp Spring Roll with Limestone Bibb Lettuce, Heirloom Carrots,
Watermelon Radishes and Cucumbers
Served with a Thai Chili Dipping Sauce

Second Course
"Blindfold" White Blend
Roasted Chicken Meatballs
With a Golden Raisin and Red Grape Gastrique,
Crispy Kale and Brioche Croutons

Third Course
Robert Mondavi, Chardonnay
Roasted Cauliflower and Sun Choke Risotto
Topped with Shaved Beamster Cheese, Tobacco Onions and Chive Oil

Fourth Course
"The Prisoner" Red Blend
Cast Iron Seared Diver Scallop and Iberico Lardo
Served over a Roasted Corn, Tomato and Wild Mushroom Fricassee
With Pickled Blackberries

Fifth Course
"Cuttings" Cabernet Sauvignon
Slow Braised Beef Brisket Confit
Tossed with Egg Yolk and Cheese Ravioli
Topped with Tempura Fried Snow Pea Tendrils and Brisket Gelée

Sixth Course
"Saldo" Zinfandel
Fried Brioche French Toast with Seared Foie Gras
Finished with Warm Kenny's Bleu Cheese and a Raspberry and Black Pepper Puree
